I have 2 gtx 560's is it possible to set one to crunch all the time and have the other only when the computer is not in use. That way the computer is usable.? thanks!

There's the "Suspend GPU work while computer is in use?" option, but that would suspend both GPUs. Don't think there are any preferences in the current version that will allow you to pause one GPU at a time, while keeping the second one running--but you can disable computing on your primary GPU so it doesn't disrupt your user experience.

Ya since I work on the PC 8 hours a day or more I was hoping to at least have one gpu working in the background.

I've never done it myself, as I don't have any computers that have more than one compute capable GPUs, but this should get you headed in the right direction:
